When was the last time you took a trip in your time machine? …Don’t have one? You sure? I don’t know about you, but every time I bake cookies and that delicious combination of vanilla and butter hits my senses, I’m immediately transported to the kitchen of my childhood. Taking a swipe of cookie dough from the batch my dad and I just whipped up… picking up that first warm one from the tray and feeling the gooey chocolate chips melting on my tongue…. You get it.
You don’t have to give up those moments on keto. It wouldn’t be a sustainable lifestyle for me otherwise! The problem, really, is the fact that… well, it’s hard to bake an entire batch of cookies and not eat all of them. At least for me, anyway. That’s why I wanted to make the absolute best single serving cookie recipe that didn’t sacrifice taste, texture, or nostalgia. You’ll love how simple this recipe is and how quickly it comes together!
Almond flour– Almond flour is the most used flour in the keto community! It is low carb, full of healthy fats and fiber, and bakes really well for most keto and low carb treats.
Sweetener Options– There are so many sugar-free sweeteners on the market now, it really is whatever you prefer! The top three are: Swerve, Allulose, and
Egg Yolk– For this recipe, we only use the egg yolk to give the cookie that gooey, fresh out of the oven texture. If you want, you could add the entire egg, a pinch of baking powder, and you will have an awesome mug cake!
Sugar-free Chocolate Chips– This is another sugar-free item that there are so many different options out there! To be frank, Lily’s Chocolate Chips make me not feel too good and really upset my tummy. I prefer the Whole 365 brand from Wholefoods. They have the best ingredient options and no weird corn fiber!
Does it have to be cooked in a mug?
Short answer, NO!
You can make this cookie in ANY microwave safe glass container! You can use a mug, a mixing bowl, a small ramekin, or even a regular cup! I have found ramekins at many home good stores for cheap!
Melt one tbsp of butter in a microwave safe mug or bowl. Add 2 tbsp sweetener. Add one egg yolk and splash vanilla (optional).
Add 5 tbsp of almond flour and mix well until smooth. Add as many sugar free chocolate chips as you want, you measure that with your heart. Mix together until everything is well incorporated.
Microwave for 40 seconds. Let cool for 1 minute. The cookie will continue to cook and become more solid as it cools. Top with some sea salt to really bring out the chocolate flavor.

- 1 tbsp melted butter
- 2 tbsp sweetener
- 1 egg yolk
- splash vanilla optional
- 5 tbsp almond flour
- sugar-free chocolate chips
- Melt butter in a microwave safe mug or bowl.
- Add the sweetener, egg yolk, and splash of vanilla.
- Mix in the almond flour unti the batter is smooth.
- Add chocolate chips in.
- Microwave for 40 seconds. If you cook too long, it will get rock hard!
- Let cool for 1 minute and enjoy!!
