    Keto Comfort Curry Casserole

    Keto Comfort Curry Casserole reminds me of a hug in a bowl. It’s cheesy, flavorful and easy for a dinner that will make anyone feel comfortable and loved. This dish can be made with minimal prep with chicken, a creamy sauce, and some vegetables, you have a delicious meal.  This keto chicken casserole is unlike anything you have ever eaten before, and you are going to keep coming back! 

    Keto Chicken Casseroles

    Casseroles were never something we had growing up so as an adult, I am finding new and wonderful casserole ideas. I love a meal that I can mix together, stick in the oven to cook, and then enjoy for a few days, because who doesn’t make leftovers when they bake a casserole?!

    Keto CURRY Casserole?!?

    Okay, Okay, this casserole is by no means anywhere close to any type of curry you have ever eaten in your life. While researching what exactly is curry, I learned that curry is any dish with a sauce seasoned heavily with spices. Different regions of the world use different seasonings in their curry sauces.   

    This recipe was a mistake. I started with ALL the wrong ingredients other than Curry powder, but the end result is a casserole I crave when I want something warm, cheesy, and comforting. This is my keto Comfort Curry Casserole and I know you will love this keto chicken casserole as much as I do!

    Ingredients

    • 1 lb. of Chicken
    • 2-3 Crowns of Broccoli
    • 1 tbsp olive oil
    • Salt and Pepper
    • -½ pound of sliced white American cheese, you can ask for it at the deli if you cannot find it in the cheese section
    • 1 cup mayo
    • 1 cup sour cream
    • 4 tsp yellow curry powder
    • 1 tbsp. lemon juice

    Notes:

    • The chicken and broccoli can be prepared any way you prefer. I normally use leftover chicken and left over roasted broccoli. Frozen will work as well, just cook following instructions on the packaging.
    • If you can’t find white American cheese, that is ok. A few others used other cheeses and really enjoyed this casserole

    Chicken Prep

    To prepare the chicken, season chicken with salt and pepper and cook in a medium high heat skillet with some oil. Then cube and set aside.

    Broccoli Prep

    Wash, cut, and put on a baking sheet. Oil, season with salt, pepper, and garlic powder and bake at 350 degrees for 20 minutes. Set aside.

    Mix together the mayo, sour cream, curry powder, and lemon juice.

    Heat oven to 350 and oil a baking dish.

    Layer your dish with broccoli, chicken, curry mix, then cheese. Do two layers and top with cheese. You can throw everything in a bowl, mix together, and put in the baking dish, just make sure that it is evenly mixed for even cooking.

    Put in the oven and bake for 25 minutes. I always turn on the broiler for 2-3 minutes at the end for the bubbly, crusty cheese top!

    Materials

    • 1 lb chicken
    • 2-3 crowns broccoli
    • 2 tbsp olive oil
    • salt and pepper
    • garlic powder
    • 1 cup mayo
    • 1 cup sour cream
    • 4 tsp yellow curry powder
    • 1 tbsp lemon juice

    Instructions

    • To prepare the chicken, season chicken with salt and pepper. Cook in a medium high heat skillet until chicken is done or heated until 160 degrees. Set aside.
    • Heat oven to 350 degrees. Wash, cut, and spread out broccoli on a baking sheet. Oil and season with salt, pepper and garlic powder. Bake for 20 minutes.
    • Mix together the mayo, sour cream, curry powder, and lemon juice.
    • Make sure oven is heated to 350 if you use microwaved broccoli. Oil a baking dish.
    • Layer your dish with broccoli, chicken, curry mix, then cheese. Do two layers and top with cheese. You can throw everything in a bowl, mix together, and put in the baking dish, just make sure that it is evenly mixed for even cooking.

      Trying it this week!. Question – rather than baking the broccoli separately, have you ever tried to cook using raw broccoli and cook it all together at the same time?

        I havent! I would still at least steam the broc so that it is a little soft!

      I love a good cheesy chicken casserole and never thought to add curry? So good! I didn’t cook the broccoli ahead of time and it still turned out fine, maybe a little wetter than intended, but still yummy! I’ll probably follow the instructions and cook the broccoli beforehand next time.
